Gluten Free One Pot Pasta Goodness

Ingredients

  • 250 gr gluten free pasta of your choice
  • 150 gr cherry tomatoes quartered
  • 1 cup fresh spinach
  • 1/2 cup courgette diced
  • 1 white onion chopped
  • 1/2 cup fresh basil
  • 2 cloves garlic crushed
  • dried herbs (e.g. oregano) & spices (salt, pepper)
  • 2 tbsp olive oil extra virgin
  • 1/2 lemon
  • 500 ml water
  • 1/2 package seafood (optional)

Instructions

  1. Chop veggies, throw everything together in a pot (including pasta!), add 500ml water and boil for approximately 10 minutes.

    Important: You need to keep stirring and separate the pasta.

  2. I’ve added some fresh basil, garlic, seafood and a splash of lemon near the end for an “extra kick”. Enjoy!
