Vegetarian Lasagne – Gluten Free

Vegetarian Lasagne – Gluten Free

Ingredients

Tomato Sauce

  • ca. 400 ml tomato passata
  • 1 courgette chopped into small cubes
  • 2-3 carrots chopped into small cubes
  • 1/2 cup dried lentils (red or green)
  • 1/2 onion diced
  • 1 garlic clove diced
  • a variety of herbs (fresh or dried) e.g. basil, oregano, thyme roughly chopped (I often just use my fingers)
  • 1 tsp sugar
  • salt, pepper to your liking

White Sauce

  • 1 tbsp cornflour
  • ca. 1 cup (soy) milk
  • salt, pepper to your liking
  • optional butter and/ or garlic for extra flavour

Everything Else

  • 8 Lasagne sheets I used gluten free Lasagne sheets
  • 1 cup grated cheese I mixed mature Cheddar with parmesan
  • 1 Mozarella

Instructions

Tomato Sauce

  1. Start frying veggies and lentils in a pan (leave out garlic and herbs), add passata and spice with salt, pepper, a pinch of sugar.

  2. Let simmer for a few minutes, add herbs and garlic and simmer for another 5 minutes.

White Sauce

  1. Add ingredients into a pot and let simmer (make sure you constantly stir it). After about 2-3 minutes the liquid will thicken, add more (soy) milk and maybe even a bit of water if needed (consistency should be similar to a cheese sauce).

  2. Optional: To get even more flavour add some butter and/or garlic.

Assembly

  1. Start with a layer of tomato sauce.

  2. Then add a layer of lasagne sheets.

  3. Followed by more tomato sauce and a layer of white sauce.

  4. Repeat step 2 and 3 and finish off with Mozzarella and cheese mix.

    Bake in fan oven (180°) for about 30-40 minutes or until cheese in golden brown.
