Paleo Pumpkin Bread – Gluten Free Goodness

Anyone in mood for a delicious pumpkin bread? I personally could eat pumpkin bread all year round…

This dairy free, gluten free and paleo compliant pumpkin bread recipe is super easy to follow and also a great snack to take away with you when traveling (we all know how difficult it can be with specific dietary requirements to find food when out and about).

How to make Paleo Pumpkin Bread

Ingredients

  • 2 cups almond flour
  • 1/2 cup tapioca flour (Affiliate Link*) Let me know if you can’t find this type of flour, so I can help you with an substitute.
  • 1 1/2 tbsp pumpkin spice  (For an AIP compliant pumpkin spice, please see here)
  • 1 tsp baking soda (Affiliate Link*)
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup organic pumpkin puree (Affiliate Link*)
  • 1/4 cup coconut oil (you can use butter from grass fed cows if you prefer and can tolerate it)
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Directions

  1. Preheat your oven to 180 (fan) and grease a loaf pan or line with parchment paper.
  2. Add all of the above ingredients into a mixing bowl and blend together on medium speed (until the batter is smooth).
  3. Pour the batter into your loaf pan and cook for 50-55 minutes (depending on the power of your oven, mine sometimes does it in 45minutes!). Tip: Use a toothpick to check the dough. If the toothpick comes out clean, your pumpkin bread is ready to go!  
  4. Let loaf cool for a few minutes before serving.

Best to be enjoyed warm!
