Green Pesto With A Twist – Paleo, Gluten Free

Too hungry to cook? This green pesto dish takes only minutes and is soooo delicious… nothing better than a homemade pesto. This one here has a little twist: It contains almonds instead of pine nuts. Give it try!

You’ll need:

  • 1 bunch of fresh basil (I use a potted plant for extra freshness)
  • about 15 whole almonds
  • 1 garlic clove
  • 10 gr good quality olive oil (native, cold pressed)
  • salt
  • pepper (if you can tolerate it)

How to:

  1. Start with roasting your almonds in a pan for one or two minutes (they don’t need to get brown, just give them a little toss).
  2. Add all the ingredients in a blender and mix until smooth.

That’s it! Enjoy with some gluten free pasta, e.g. organic buckwheat pasta.

Tip: How about a bit of salmon or some courgette shavings to spice it up a little?
